DINNER:Pumpkin & Cashew Protein Pasta

SERVES 4-6
Prep time: 15 minutes
Cooking time: 5 minutes
INGREDIENTS:
1 packet pasta of choice
2 cups roasted pumpkin
1/2 cup soaked cashews
1 1/2 cups Chaokoh Coconut Milk
2 cloves garlic chopped
1/3 cup nutritional yeast
1 serve True WPC in Natural
1/2 tsp paprika
1/2 tsp Member's Mark Clinical Strength Cinnamon
Salt & pepper to taste
Method
- Cook pasta according to packet instructions, drain and set aside.
- In a food processor or blender add the pumpkin, soaked cashews and milk, blend until very smooth.
- Once the mixture has no lumps add the remaining ingredients and mix together until all combined. Add salt and pepper to taste and mix again.
- Once you're happy with the flavour, add sauce to the pasta pot and heat on low to warm through. Garnish with lime, chilli, spring onions and basil.
