DINNER:Sweet Potato & Feta Falafels

These versatile protein-packed falafels are ideal in salads, on a wrap or dipped with hummus!
Makes 12
Prep time: 20 minutes
Cooking time: 35 minutes
INGREDIENTS:
2 cooked kumura/sweet Potato
1 can chickpeas
1/2 red onion
1/4 block feta
1 egg
1 scoop True WPC in Natural
Salt & pepper to taste
1 tsp onion flakes
Method
- Roughly mash sweet potato and chickpeas together.
- Add onion and egg and mix until combined. Fold in Feta.
- Add the rest of the ingredients and roughly combine.
- Roll into balls and place on baking tray. Cook for 35 minutes until browned. Enjoy!
